Poundland: Sugar Free Flapjacks by Jane Asher

By now you and the kiddies have probably devoured all those Halloween sweets! With more gluttony no doubt planned over the Christmas holidays, now may be a good time to limit your sugar intake. With that in mind, here’s a great recipe from Poundland and Jane Asher for Sugar Free Flapjacks.

These flapjacks have no added sugar or sweeteners in them and are a great idea for tea time or healthy finger food at parties! They are sweetened only by the bananas and other fruit in the recipe, and are really quick and easy to make. Vary the ingredients by adding your favourite dried fruit, different kinds of seeds and maybe a few chopped nuts. If you want to make it low fat, you could use vegetable oil instead of melted butter. The recipe below makes 8 in total.

Ingredients

  • 2 ripe bananas
  • 75g butter, melted
  • 1 tsp vanilla essence
  • 75g chopped dates
  • 75g dried cranberries
  • 25g mixed dried seeds
  • 150g rolled oats
Method

Pre-heat the oven to 175°C (160°C fan assisted, gas mark 4). Grease a tray-bake tin with butter or oil.

Slice the bananas into a bowl and mash with a fork or potato masher. Add the melted butter, dates, cranberries and seeds and mix together. Add the oats and stir well. Leave for a few minutes to allow the oats to soak up the butter, then turn into the tin and press down evenly.

Bake for 25-30 mins or until the top is beginning to brown. Divide into 8-10 pieces with a sharp knife while still warm.
