As we head into December, it’s time to think about festive food and Christmas recipes.

From mouth-watering mince pies to tasty turkey and festive fruitcake to decadent desserts, ‘tis the season to be merry… and well fed!

With the help of Poundland’s very own baking expert, Jane Asher, whipping up the perfect Christmas pudding or fruity Christmas cake is easy.

Jane’s Traditional Christmas Pudding

Ingredients:

  • 100g sultanas
  • 100g raisins
  • 100g currants
  • 150g soft, dried dates, figs and/or apricots
  • 50g glace cherries, chopped
  • 50g candied peel
  • Zest and juice of 1 orange
  • 100ml cider
  • 50ml rum or brandy (or juice for a non-alcoholic choice)
  • 125g softened butter
  • 150g soft, dark brown sugar
  • 2 medium eggs, lightly beaten
  • 25g chopped almonds
  • 50ml golden syrup, warmed
  • 75g plain flour
  • 50g fresh breadcrumbs
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ½ tsp all spice

What you’ll need to serve with (optional):

  • Washed silver coins
  • A little brandy or rum
  • Sprig of holly

Jane’s Light, Fruity Christmas Cake

This Christmas cake is not your run of the mill traditional fruitcake where all the berries and fruit merge together in a big sticky, dense mess – but rather, it is more like Madeira where the ingredients keep their shapes and texture. This cake will keep for up to about 8 weeks.

Since it’s Christmas, why not push the boat out and have whole dried apricots and almonds that you can chop yourself? Ready chopped ones can be quite small and have a less appealing taste.

The amount the ingredients will make is a 1 x 22cm square cake – but don’t worry if you don’t have a small tin as you can bake the leftovers in cupcake cases and use them for afternoon tea buns.

Ingredients:

  • 100ml cranberry juice
  • Zest and juice of 1 large orange and 2 small lemons
  • 200g dried cranberries
  • 300g raisins
  • 360g dried cherries
  • 360g dried blueberries
  • 250g dried apricots, roughly chopped
  • 150g blanched whole almonds, roughly chopped
  • 200g spreadable butter
  • 150g soft margarine
  • 300g light brown soft sugar
  • 5 large eggs
  • 400g plain flour
  • 1 tsp baking powder
