Ginger & Garlic Pork Stir Fry

With summer well and truly underway, it’s a great time to think about tasty dinners that incorporate great flavours but involve minimum fuss. Sometimes the simplest combination of flavours can be the most moreish.

Soy, garlic and ginger, mixed with a little honey creates an amazing marinade and provides a fantastic accompaniment to pork. In this week’s blog, we feature a stir fry recipe from Iceland that’s sure to add some extra sizzle to your summer!

Ginger & Garlic Pork Stir Fry

Ingredients

2 tablespoons of dark soy sauce
3 garlic cloves, peeled and crushed
1 teaspoon of ground ginger
2 teaspoons of runny honey
330g pork loin steaks, trimmed of fat and cut into strips
185g of frozen broccoli
2 tablespoons of vegetable oil
1 red pepper, deseeded and cut into strips
8 spring onions, roots removed and sliced into approximately 2cm chunks
Cashew nuts to finish

Method

To make the marinade, stir together the soy sauce, garlic, ginger and honey in a bowl. Then pour this into a freezer bag. Add the pork strips into the bag and then leave to marinate in the fridge for approximately 10 minutes.

In the meantime, boil the broccoli florets for 5 minutes and then drain away the water. Put the broccoli to one side. Then, heat the oil in a wok – or large frying pan – over a very high heat. Once the oil is sizzling hot, add the pork and marinade. Move the pork around the wok or frying pan constantly for 2 minutes, after which add in the pepper strips, broccoli and spring onions. Be sure to do it in that order.

Keep stir frying the ingredients, moving the pork and vegetables around the pan for another 5 minutes.

After this time, serve the stir fry along with steamed rice or noodles and finish with cashew nuts for a fantastic family feast!

This recipe serves 4 people and will take approximately half an hour to cook.
